Harvesting and use

As suggested above. Regular picking is essential for prolonged lush growth, and to prevent the stems from becoming woody.

Cook like spinach; amaranthus is excellent steamed. Very young leaves can be used raw in salad.

Cultivars

There is much confusion over named varieties. ‘White-leaved’ varieties are most tender and ‘buttery’. ‘Green-leaved’ and ‘red-leaved’ are coarser, more colourful and generally more productive.
